I cook dinner most everyday for my family. Luckily none of them are picky eaters for the most part. My husband is not a huge fan of chicken and my youngest is not a fan of veggies at all. Planning dinners is easy most of the time but generally gets monotonous. I always feel like I am cooking the same things over and over. And I am always asking for ideas but I rarely get any answers. Beef is always the safest bet, closely followed by chicken cordon bleu casserole.
Yes amazingly enough chicken is second on the list of favorites. It is breaded fried chicken bites, cubed ham, and a Swiss Cheese sauce. It can be a bit time consuming but it is totally worth it. Anything that is a casserole or can go in the crock pot are my favorite dishes. Set it and forget it is my motto. I do love to cook and bake but can easily get side tracked and forget all about what I am doing. Things get burned, I get pissed. It just isn’t pretty.
So today’s dinner is a play on the Olive Garden’s Zuppa Tuscana. I love the soup and think it is fantastic. My husband is not a fan of soups so I am turning the flavors into a casserole, sort of. Cubed potatoes, half & half, salt, pepper, seasoning salt, garlic sweet sausage, bacon, broccoli, onions and mushrooms. It smells absolutely fantastic. I would have used a leafy green like spinach or kale but I had leftover broccoli and I figured this was the perfect way to use it up.
